Definition of 'Anthocyanins'

A group of FLAVONOIDS derived from FLAVONOLS, which lack the ketone oxygen at the 4-position. They are glycosylated versions of cyanidin, pelargonidin or delphinidin. The conjugated bonds result in blue, red, and purple colors in flowers of plants.

Common names: Anthocyanins; Anthocyanin; Anthocyanidins; Anthocyanidin; Leucoanthocyanidins

Conformational and substitution effects on the electron distribution in a series of anthocyanidins.

8 Sep 2009 Density functional theory (DFT) and polarizable continuum solvation model (PCM) calculations have been applied to the study of the acid/base and prototropic equilibria of anthocyanidins. The results indicate that, excluding pelargonidin, the most ... Read more...

Fast analysis of isobaric grape anthocyanins by Chip-liquid chromatography/mass spectrometry.

30 Aug 2009 In a previous work, direct-infusion electrospray ionization ion trap tandem mass spectrometry (ESI-IT-MS/MS) was applied to the study of anthocyanins in extracts from the skins of Clinton grapes, a non-Vitis vinifera red grape variety qualitatively ... Read more...

Structural properties of anthocyanins: rearrangement of C-glycosyl-3-deoxyanthocyanidins in acidic aqueous solutions.

10 Aug 2009 Seven C-glycosyl-3-deoxyanthocyanidins were made from their corresponding C-glycosylflavones. The structures of their rearrangement products, which were formed in acidic aqueous solutions, were elucidated. Rotameric conformers were detected for all ... Read more...
